Roasted Red Pepper & Cucumber Sandwich

Ingredients
- ½ Roasted red bell pepper
- 2 slices Low sodium bread
- 6 rounds Cucumber
- 2 slices Onions
- 2 tbsp Roasted garlic hummus
- 1 tbsp Olive oil dressing
Instructions
- Start by toasting the bread. Once toasted, spread hummus on the bottom piece and assemble the sandwich by adding the lettuce, cucumbers, onions, and dressing. Cut in half and serve.
