Apple Cucumber Salsa
1: Small dice the apple, cucumber, red onion, and orange bell pepper and place into medium mixing bowl.
2: Mince cilantro and add to bowl.
3: Add red vinegar.
4: Season with black pepper and mix all ingredients with a wooden spoon or rubber spatula.
1: In a small sauce pot or saute pan set to the OFF position, add egg whites and non-frat greek yogurt.
2: Bring to a low heat and continue to stir removing from heat every minute or so.
3: Cook until light and fluffy.
4: Fold in nutritional yeast, remove from pot/pan and set aside.
Eat everything separately or plate everything as shown in the image above!
